Butter Crocks were used prior to the days of refrigeration and still used in parts of the U.S. and Europe as a means to keep butter soft and unspoiled. The cup containing the butter is placed upside down into the container which hold enough water to seal the butter from bacteria thus preventing spoilage. The water is replaced every 4-7 days.
